All of Casa Neuhaus knives are black blade ceramics with stainless steel handle. Unlike white ceramic blades black blades are made of zirconium carbide which means that blades have been subjected to an extended final firing process that produces this stronger blade. The zirconium carbide blades (which are the black ones) are up to twice as hard and sharp than the white blades. The ceramic knives are made of 8.5 Mohs strength Zirconia. A diamond is grade 10 in the Mohs scale of mineral hardness, steel ranges from 7.5 to 8.
