Specially designed for baking mini madeleines, this Elastomoule tray is suitable for making 20 pastries. The authentic shape of the moulds enables to bake mini madeleines in keeping with tradition. Thanks to its design, Elastomoule transmits and diffuses heat perfectly for excellent caramelization of madeleines that are perfectly shaped, easy to turn out and golden on top and bottom. It can be used for hot preparations and cold forming alike. For baking, it can only be used in a traditional oven. Place the tray on a rack or perforated baking tray for perfect heat convection. Each tray comes with a recipe card prepared by MOFs and/or Pastry World Champions. De Buyer advise you to wash your Elastomoule mould by hand with warm water and washing-up liquid.
