The Elastomoule for Canelés is specially designed to make these famous pastries from Bordeaux. Featuring the typical shape and traditional size,  the mould also diffuses and transmits heat ideally, enabling excellent caramelization of the Canelés, which turn a wonderful color and release an explosion of authentic flavors, as with traditional copper moulds. It can be used for hot and cold preparations alike, it can be used to cold form desserts (mousses, creams, flans, jellies) with an original style. For baking, it can only be used in traditional ovens. Place the tray on a rack or perforated baking tray for perfect heat convection. 7 MOFs and/or Pastry World Champions have placed their talent at the service of Elastomoule: a recipe card comes with each tray.
